Salami Brie Club Sandwich

I love club sandwiches! And this has quickly become one of my favorites.


Duration: 10 minuts

The ingredients
  • 3 slices whole wheat (spelt) bread
  • 1/2 avocado
  • 3 slices tomato
  • 8 slices cucumber
  • 4 slices brie
  • couple of spinach or arugula leaves
  • 3 thin slices salami
  • Pepper

What you do:
  1. Toast the bread in a toaster. Mash the avocado on 2 slices bread (these are the lower and middle slices) and season to taste with pepper. 
  2. Put 4 slices of cucumber, 3 tomato slices and brie on the bottom slice of bread. Put the second slice on top with the avocado facing upwards and put spinach or arugula leaves on it, the rest of the cucumber slices and the salami. 
  3. Put the last slice of bread on top and cut diagonally in half.

Enjoy!

Super Fried Eggs

What do you do when you work at home and actually have appetite for anything and everything? Right, you combine it in one dish! And it was supe tasty! Perfect actually. And thereby also a good basis for my workout this afternoon! Tonight is the Australia-Netherlands and that I can not miss, so I work at home allowing me to workout in the afternoon instead of the evening.

Ow and not unimportant! I have revived my healthy living in heels Twitter Account (Healthy_inHeels)! But now to this great combo with fried eggs!



Duration: 10 minutes

The ingredients for 1 serving:

  • 2 eggs
  • 2 spelt or whole wheat slices of bread
  • 1/2 avocado
  • Handful arugula
  • 1/2 tomato
  • 50 g smoked salmon
  • Cheese
  • Mayonaise
  • Salt & pepper
  • Butter

What you do:

  1. Melt the butter in a skillet over medium heat. Break the 2 eggs and fry about 5 minutes till 'cooked'. Against the end put a couple of slices of cheese on it and wait until they are melted. 
  2. Meanwhile, mash the avocado on the two slices of bread. Season with pepper, add the arugula and put two slices of tomato on top. Garnish with the salmon and place the fried eggs with cheese on top when they are ready. 
  3. Sprinkle with sea salt and a dab of mayonnaise per sandwich.

Pollo Tonnato Sandwich

The recipe for my pollo tonnato salad is an absolute hit! And I get why. It's amazing! Just like you're in a restaurant. But I also like to have sandwiches and when I go out to lunch one of my favorite sandwiches is a vitello tonnato sandwich. But, that's made with veal which doesn't fit my clean eating lifestyle. So in de pollo tonnato salad I decided to replace the veal with chicken and it was heavenly. So why not make a sandwich! And yes, it was gooood!!

It's Sandwich Time!

It's Wednesday, which means for me that it's sandwich time for me. I always work at another location on this day and  don't always have access to a refrigerator to keep my lunch salads. Which isn't to bad since it's good to have some variation in your meals! And I also made Wednesday's dinners: no carbs dinners which means, no rice, no pasta, no potatoes, no noodles, no bread or anything. So from now on you can expect a carb free dinner recipe each Wednesday. Today I will make a simple chicken dish with asperagus and some other veggies but will post this recipe tonight!

First it's time for lunch, and a made two simple but divine sandwiches using ingredients you probably already have in your home. One triple C sandwich (Chicken - Cucumber - Cottage Cheese) and a simple tomato-egg combo. I had a big bowl of oatmeal for breafast and since I didn't have a snack at 11 A.M. I ate two whole sandwiches, but of course you can also make one and have a small arugula sandwich on the side.



Amount of servings: 1

Duration: 5 minutes prep for both sandwiches together

The ingredients for the Triple C Sandwich:
  • 2 slices of whole wheat (spelt) bread
  • 1 tbs cottage cheese
  • 1 slice of chicken breast
  • 4 cucumber slices
  • Lettuce
  • Pepper

What you do:
  1. Smear the cottage cheese on one slice of bread and season with pepper. Then put the lettuce, slice of chicken breast and cucumber on the cottage cheese. Put the other slice of bread on top, slice in halve and the first sandwich is ready to be eaten.
 
The ingredients for the Tomato-Egg Combo:
  • 2 slices of whole wheat (spelt) bread
  • 1 ts cottage cheese (more to taste)
  • 1 boiled egg
  • Lettuce
  • Salt & Pepper

What you do:
  1. Smear the cottage cheese on one slice of bread and season with pepper. Then put the lettuce, sliced tomatoes and egg on the cottage cheese. Put the other slice of bread on top, slice in halve and the second sandwich is ready to be eaten.

Healthy & Heavenly Grilled Cheese

I always have, and always will love a good grilled cheese sandwich! That's still my guilty pleasure. But today I made two more healthy options! I was looking through my cookbooks for some new inspiration and these are bases on recipes from Jamie Oliver's 15 minute meals. And they are good! Perfect substitute for one with melted cheddar cheese and ham! I made a vegetarian version and one with chicken. Try them out both!

I only took a picture of the sandwiches before I put them in my 'Sandwich Iron' (tosti ijzer in Dutch, I don't know the correct English term..) because afterwards it wasn't so pretty.


Vegetarian 'Tosti'

The ingredients:
  • 2 slices of spelt or whole wheat bread
  • 2 to 3 chestnut mushrooms
  • Handful arugula
  • 25 gr soft goat cheese

What you do:
  1. Put one slice of bread on a chopping board and put the arugula on top. Slice the mushrooms and put them on top of the arugula, crumble over some goat cheese. Season with pepper and put the other slice of bread on top and put it in your grill until it's done.

Kind of Greek 'Tosti'

The ingredients:
  • 2 slices of spelt or whole wheat bread
  • 1/2 ripe tomato
  • 1 slice of chicken breast
  • 20 gr feta cheese
  • 1/2 avocado
  • pinch of dried oregano

What you do:
  1. Put one slice of bread on a chopping board and put the chicken breast on top. Slice the tomato and put some slices on top of the chicken. Cut the avocado into cubes, put on top and crumble over some feta cheese. Season with oregano and put the other slice of bread on top and put it in your grill until it's done.

Avocado Pomegranate Open Sandwich

Inspired by one of my favorite instagram accounts: sassyballerina, who also blogs about food on: Hip & Healthy - Food I made this delicious sandwich! I simplified it to make it more budget but I was still amazed by the combination of flavors! In my opinion this is a perfect healthy sandwich for Winter and would also make a delicious, Christmas colored, breakfast during the holiday's! I'm sure it will be part of my Christmas breakfast! Since I'm also working on a post on how to 'survive' Christmas in the most healthy way whilst you van still indulge in some not so healthy or clean treats, this is the perfect example of a healthy festive treat!


Duration: less than 5 minutes

The ingredients:
  • 2 slices spelt or whole wheat bread
  • 1 ripe avocado
  • 6 cherry tomatoes
  • Couple of arugula leaves
  • 2 tbs pomegranate seeds
  • Pinch of pepper

What you do:
  1. Toast the slices of bread. Then mash the avocado on both slices of bread and season with pepper. Put the arugula on top, slice the cherry tomatoes in half and put on top followed by the pomegranate seeds and your delicious open sandwich is ready to be eaten!

My Mom's Tuna Sandwich

This grilled tuna sandwich is an oldie but a goodie. My mother used to make this for me all the time and since I had all the ingredients I decided to make this one for lunch today! The melted cheese is a cheat because melted cheese can't be absorbed by your intestines, but for this sandwich it's only a small amount and sometimes you deserve little cheats like these!


Duration: 15 minutes

The ingredients

  • 1 whole wheat baguette 
  • 2 tbs cottage cheese
  • 4 slices tomato
  • 1/2 can tuna in water
  • 2 tbs grated 30+ cheese
  • Pepper

What you do:
  1. Preheat the grill in your oven. Slice the baguette in half and put the cottage cheese on each side, seasoned with pepper. Followed by the tuna, tomato slices and grated cheese. Put them in the oven under the grill for about 10 minutes. But make sure to keep an eye out and get them out if they start to get golden brown!

Grilled Portobello Sandwich

Last Sunday I made this delicious grilled Portobello sandwich from Jamies 15 minute meals! I had it for dinner so I ate two of these sandwiches but they are also perfect for lunch at home, just use half of the ingredients. And if you want a vegetarian option just omit the ham! The original recipe has a radish salad on the side but I choose not to and just have two of these amazing sandwiches!


Duration: 15 minutes

The ingredients for 1 person dinner:
  • 2 spelt baguettes
  • 2 Portobello mushrooms
  • 8 slices 30+ cheese
  • Some fresh thyme leaves
  • 1 ripe pear
  • 4 slices raw ham
  • 1 tomato
  • 2 tbs cottage cheese
  • Pepper & salt
  • Couple of salad or arugula leaves

What you do:
  1. Preheat your oven to 200 degrees of Celsius and bake the spelt baguettes.
  2. Cut the stems of the Portobello's and put the caps in a grill pan on high heat. The water will go out of them! After about 5 to 8 minutes they will be done.
  3. When the baguettes are done get them out of the oven and put the oven on grill position.
  4. Put the mushrooms in a baking dish with the slices cheese on top. Sprinkle over some fresh thyme leaves and put under the grill in the oven until the cheese is melted (about 5 minutes).
  5. Meanwhile, cut the pear into quarters, put them in the hot grill pan and turn when grilled on one side. Then put it the raw ham and bake for 1 to 2 minutes. 
  6. Put the cottage cheese on the sandwich, season with salt and pepper. Slice the tomato and put on top with the salad or arugula. Get the Portobello's out of the oven, halve them and put them on the sandwich with the smoked ham. Put the pear on the side and your dinner or lunch is ready!

Fig & Ham Bruschetta

Last Saturday I had a couple of friends over from Bootcamp and made them dinner! As a starter I decided to make these fig and ham bruschetta's from my new Delicious cookbook which I got from my mom. And they were delicious, perfect combination of flavors! It fits an Italian meal very well.

Of course you can also use the ingredients to make a delicious lunch baguette! Just substitute the ciabatta for whole wheat or spelt bread and cut the figs smaller after you grilled them!


Duration: 10 minutes

The ingredients for 4 servings:
  • 12 slices ciabatta bread (If you want a more healthy version try whole wheat baguette!)
  • 12 slices thinly sliced raw ham
  • 8 fresh figs
  • Soft goat cheese
  • Some fresh basil leaves
  • Olive oil
 Directions:
  1. Put your grill pan on high heat. Lightly brush both sizes of the ciabatta slices with olive oil and put them in the grill pan for 1 to 2 minutes each side until golden brown.
  2. When they are done put three pieces on each plate. Then halve the figs and lightly brush the pulp with olive oil and put them 'pulp-down' in the grill pan until they are caramelized (takes about 1 to 2  minutes).
  3. Meanwhile put the slices of raw ham on top of the ciabatta. When the figs are done put 4 on each plate on top of the ham and crumble over the goat cheese. Finish with some fresh basil leaves and your starter is ready!  

Variation tip: If you're not a hugh fan of goat cheese you can also use feta cheese or blue cheese.

Vegetarian Sandwich

Today I made the most delicious vegetarian sandwich! Perfect and full of vitamins to fight my upcoming cold! Also in the upper left corner a sneak peak of my do it yourself notebook project. My old notebook in which I keep my recipes was full so I went to the Hema and there I saw letter stamps! Oh my, that was something I had to have! Then I found a plain notebook which was perfect because now I could use my stamps to personalize my recipe idea notebook!


What you need for 2 sandwiches (I already ate one because I couldn't wait... so good are they):
  • 1 tomato
  • 2 slices of spelt bread
  • 1/2 avocado
  • Some arugula leaves for on the sandwich
  • 1 tbs homemade red pesto
For the salad:
  • Handful arugula
  • 2-3 sundried tomatoes
  • couple of mozzarella cubes

Quick and easy directions:

Simply roast the slices of bread in your toaster. When they are done put the homemade red pesto on one side each. Then layer one slice with sliced tomato, arugula and sliced avocado and put the second slice of bread on top with the pesto facing down. Cut in half, put on your plate. Then put some arugula on your plate as well mixed with the sliced sundried tomatoes and mozzarella cubes.

Chicken Pesto Sandwich

It's time for a new sandwich lunch recipe! It's getting colder every day in the Netherlands and I just don't eat as many lunch salads as I used to. So time to think of some new healthy sandwiches and this one is absolutely delicious!


The ingredients:
What you do:
  1. Toast the bread in your toaster. When done, put the pesto on the bread slices followed by the chicken, arugula and sliced cherry tomatoes. Put the second slice of bread on top, cut in half and your quick lunch is ready!

Tuna Salad Sandwich

Just bought the new cooking book from Jamie Oliver: Save With Jamie! I love his books and recipes. They are such a great source of inspiration for me!! I always make my own tuna salad because I like to know what's in my food and store bought tuna salad contain lots of food additives. So I combined aspects of my tuna salad with the one from Jamie's new cooking book and it's amazing! And healthy!


Ingredients for 2-4 tuna sandwiches:

  • 1 can of tuna chunks in water (185 g)
  • 1 small red onion
  • 1 small pickle
  • 1-2 tbs white wine vinegar
  • 2 tbs quark
  • Pepper & Salt to taste
  • Slice(s) of toasted spelt bread
  • Some fresh lettuce leaves
  • Cucumber Slices

What you do:
  1. Chop the onion and pickle in small pieces. Put the onion in a small bowl with the white wine vinegar (to take away the strong onion flavor). 
  2. Drain the tuna, mash in a bowl with a fork, add the onion and pickle and the quark and mix well. Add Salt and Pepper to taste. 
  3. Put the slices of cucumber and lettuce on a bread and put the tuna salad on top.

Variation tip: Add some grated cheese to the tuna salad or some tomato slices on the bread.

Ham Sandwich

Time for another delicious sandwich! This time with ham. I almost never eat ham but once a while I make an exception and what better way to eat ham than combined with other delicious ingredients on a slice of bread!


The ingredients:

  • 1 slice of spelt bread
  • 1 boiled egg
  • couple of slices of cucumber
  • 1-2 tbs cottage cheese
  • Little bit arugula
  • 1 slice of ham
  • Salt & Pepper

What you do:
Very simple, just put the ingredients on top of the bread in the following order: cottage cheese (seasoned with pepper), cucumber, arugula, ham and the egg on top (seasoned with salt).

Delicious!

Kind of Smörrebröd with Shrimps

Today I made this delicious super quick sandwich by accident!! The shrimps were on sale this week so I thought I treat myself and the other ingredients were already in my refrigerator. It's perfect and it reminds me of smörrebröd from my trip to Stockholm with my Mother 2 years ago so I just had to share this with you! I ate 2 of these for lunch.


What you need:
  •  2 slices whole wheat bread
  • 100 g pink shrimps
  • 1 boiled egg
  • 1 tomato
  • 8 slices cucumber
  • 1 lemon wedge
  • fresh dill
  • 1 ts organic mayonnaise

What you do:
First put the mayonnaise on both slices of bread followed by the sliced tomato, cucumber and egg. Finish with the shrimps and fresh dill to taste. Serve with a lemon wedge on the side!

Lunch Recipe: Serrano Ham Sandwich

In the weekends I usually eat sandwiches for lunch, whilst on working days I eat salads. This sandwich I eat really often and is super quick and easy!



The ingredients for 1 sandwich:
  • 1 slice spelt bread
  • Cottage cheese
  • Arugula
  • 1 slice Serrano ham
  • Pepper

Directions:
Just put the slice of bread in your toaster and when done first put the cottage cheese on the sandwhich seasoned with some pepper, followed by the arugula and Serrano ham. Your quick and delicious sandwhich is ready to be eaten!

Smoked Salmon Sandwich

Sandwiches are easy to make and delicious. This smoked salmon sandwich is one of my favorites! Just put another slice of spelt bread on top to take it with you to the office!




The ingredients for 2 sandwiches:

  • 2 slices Spelt bread
  • 100 gr smoked salmon
  • Arugula
  • 1 avocado
  • Cottage cheese
  • Pepper

Directions:
  1. Put the slices of bread in your toaster and cut the avocado and shred the salmon.
  2. When the bread is done start with putting the cottage cheese and pepper on it. Then put the arugula and avocado on it and finish with the salmon.
  3. If you want to take it with you to the office, put another slice of bread on top of it, slice them in half and your ready to go!
