Fall Pancakes

It's Sunday and that means #pancakesunday on Instagram haha. But autumn has also started in the Netherlands. This weekend is a bit weird weather, it is much warmer than normal, but nature is ready for autumn, the leaves fall from the trees and the wind whips up more and more. If we are to believe the predictions for next week it will get a lot colder and rainier. Really autumn weather. So that means fall type dishes like my stew from yesterday which will be up on the blog tomorrow, but today we start with my favorite banana-egg oatmeal pancakes with warm apple and banana from the oven. Perfect for fall!


The recipe for 1 large portion (9 small pancakes):

The ingredients:
  • 2 banana
  • 1 small apple
  • 2 eggs
  • 1-2 tbs oats
  • 1 ts cinnamon
  • Couple of blueberries and strawberries
  • 1/4 ts coconut blossom sugar
  • 1/2 ts dessicated coconut
  • Piece of dark chocolate by Tony Chocoloni
  • 3 heapes ts low fat quark
  • Butter on roomtemperature

What you do:
  1. Preheat the oven to 175-180 degrees Celsius. Meanwhile, cut half a banana into slices and the apple into pieces. Mix with 3/4 teaspoon cinnamon and coconut blossom sugar. Grease a baking dish with butter and place in the apple-banana mixture in it. Put a few tiny pieces of butter in between and put in the oven for 15 minutes. Turn halfway. 
  2. Mash the rest of the banana and mix with 2 eggs in a large bowl. Stir in 1/4 tsp cinnamon and oatmeal through it.
  3. Put a large non-stick pan on low to medium heat with a piece of butter. When the butter is melted add the batter to the pan with a small 'sauce spoon'. The pancakes need to be small to make sure they don't break! As a guidance: you can make 3 small pancakes in one frying pan. Bake for a couple of minutes on low to medium heat (not to high because then they will burn!) on one side and then gently flip them over and bake for another minute or two on the other side.
  4. Put them on your plate with a bowl on top to make sure they stay warm whilst you make the second batch of pancakes. Make sure that inbetween batches of 3 pancakes you put a small piece of butter in the pan.
  5. The recipe is for 9 small pancakes and inbetween each batch I add a heaped ts low fat quark. 
  6. When the pancakes are done you can get the banana-apple mixture from the oven and put it on your plate together with the berries, dessicated coconut and soms pieces of dark chocolate.
