Couscous with Grilled Vegetables

Friday is left-over day! I think it's a waste to throw away any foods and it also saves me money. Today I decided to make a vegetarian couscous with grilled vegetables because I liked it a lot last Wednesday and again, it was delicious!


The recipe for 1 person:

The ingredients:


  • 75 g spelt couscous
  • 1/2 egg plant
  • 1 orange paprika
  • 1/2 sweet paprika
  • 100 g cherrytomatoes
  • 50 g feta cheese
  • couple of fresh basil leaves
  • 1 tbs lemon juice
  • piece of butter
  • Salt & Pepper
  • Olive oil

What you do:
  1. Cook the couscous as directed on the package. I always stirr in a small piece of butter at the end to make it extra tasty. 
  2. Cut the eggplant in slices of about 2 mm thick. Sprinkle with salt, pepper and a thin layer of olive oil and gril in the grillpan on high heat. Cut the paprika's into pieces, grease with a thin layer of olive oil and gril when the egg plant is done. 
  3. Cut the cherrytomatoes into quarters and the feta cheese into cubes. Slice the grilled vegetables into bite sized pieces. Mix all the vegetables and 1 tbs lemon juice through the couscous when done. Sprinkle the feta cheese on top together with some basil leaves.
