Salmon Spaghetti

After a nice lunch yesterday in Amsterdam and a busy day of work, it was time for a quick but very tasty pasta! Very luxurious, but this was the only night I have to cook this week!

The recipe for 1 person:



Duration: 15 minutes

The ingredients:
  • 75 gram whole wheat (spelt) spaghetti
  • 100 g smoked salmon
  • 125 ml creme fraiche
  • 1 portion cherry tomatoes from the oven
  • 150 g chestnut mushrooms
  • 1 onion
  • 2 garlic cloves
  • 30 g grated Parmesan Cheese
  • Salt & Pepper
  • Olive oil
  • Optional: lettuce

What you do:
  1. Start by making the cherry tomatoes. Click here for the recipe.
  2. Cook pasta as directed on the package. Cut the mushrooms into quarters and the onion into small pieces. Heat a splash of olive oil in a frying pan over medium-high heat, add 2 crushed garlic cloves and fry the onion and mushrooms. 
  3. Cut the salmon into strips and put them together with the creme fraiche, half the grated parmesan cheese, salt and pepper in the pan. Lower the heat and let it heat through. 
  4. Serve the sauce on the pasta topped with the cherry tomatoes. Garnish with some lettuce if you prefer and serve with the rest of the grated Parmesan.
