Shrimp Pasta di Pomodoro

Getting my new fitness schedule tonight so having a big meal to make sure I have enough energy to train and lift those weights! My favorite pre workout meal is pasta and tonight I made a new one with shrimps, and yes it was delicious!


Duration: 10 minutes

What you need for 1 serving:

  • 75 to 100 gr spelt or whole wheat pasta
  • 100 gr large (tiger) shrimps
  • 1 garlic clove
  • 3 anchovy fillets
  • 4-5 chestnut mushrooms
  • 1/3 zucchini
  • 1 small white onion
  • Pinch of saffron and cinnamon
  • 250 ml passata (di pomodoro)
  • 1/2 lemon
  • Grated parmesan cheese
  • Couple of arugula leaves
  • Salt & Pepper
  • Olive oil

What you do:
  1. Cook the pasta as directed on the package.
  2. Bake the Shrimps in a large frying pan in 1 tbs olive oil with the crushed garlic clove, the pinch of saffron and cinnamon and sliced anchovy fillets. Slice the vegetables. After 2 to 3 minutes add the sliced mushrooms, zucchini and onion and bake until everything is done. Then add the passata, juice of half a lemon and season with salt and pepper and remove from heat when warmed up. Then mix through the pasta and put it on your plate. Top it of with grated parmesan cheese and some fresh arugula leaves.
