Quinoa Dinner Salad

Time for a vegetarian meal! I actually ate a lot today. Don't know why but I was feeling hungry so I had a big bowl of oats for breakfast, two spelt crackers with chicken at 11 A.M., 3 slices of spelt-quinoa bread of which two with avocado, tomato & egg and one with cottage cheese, cucumber and salmon and in the afternoon 2 tangerines and a rice cracker with peanut butter. So decided to make a simple and light quinoa dish for dinner tonight. It's very basic but due to the lime juice all the flavors are enhanced.

Duration: 15 minutes

The ingredients for 1 serving:
  • 60 g white quinoa 
  • 30g red quinoa 
  • 3 carrots  
  • 150g green beans 
  • 1 red paprika 
  • 1 tablespoon coarsely chopped parsley 
  • 1 lime

What you do:
  1. Boil 1 liter of water into the kettle and was the quinoa well under cold running water. Put the quinoa with the boiling water in a pan and cook for 15 minutes.  
  2. Meanwhile, cut the carrots into slices and put it after 3 minutes with the quinoa in the pan. Cut the ends of the beans and put them 2 to 3 minutes later in the pan. 
  3. Then cut the paprika into cubes and chop the parsley.
  4. Drain the quinoa when it is done, put on a plate and mix with the paprika, parsley and the juice of the lime.

Nederlands recept - Quinoa Diner Salade:


Tijd: 15 minuten

De ingrediƫnten voor 1 portie:
  • 60 g witte quinoa
  • 30 g rode quinoa
  • 3 wortels
  • 150 g sperziebonen
  • 1 rode paprika
  • 1 el grof gehakte peterselie
  • 1 limoen

Bereiding:
  1. Kook 1 liter water in de waterkoker en was de quinoa goed onder de koude kraan. Doe deze dan met het kokend water in een pan en kook 15 minuten. 
  2. Snijd ondertussen de wortels in plakjes en doe deze na 3 minuten bij de quinoa in de pan. Snijd dan de uiteinden van de boontjes en doe deze weer 2 tot 3 minuten later erbij in de pan. 
  3. Snijd dan de paprika in blokjes en hak de peterselie.
  4. Giet de quinoa af wanneer deze klaar is, doe op een bord en meng met de paprika, peterselie en het sap van de limoen.

Eet smakelijk!
