Charlie's 3 favorite pasta's

In this guest blog you will find the 3 favorite pasta's from Charlotte from Charlie's Kitchen!


Charlie's Tagliatella 


First up this delicious tagliatella! 
The ingredients for 2 servings
  • 200 g kamut tagliatella
  • 250 gr minced chicken
  • 1 shallot
  • 2 garlic cloves
  • 3 tomatoes
  • 2 tbs oatcream
  • 2 handfuls wild spinach

What you do:
  1. Cook the kamut tagliatella as indicated on the package. 
  2. Bake the minced chicken along with the cloves of garlic and shallot in about 8 minutes or until tender. After a few minutes add the spinach. 
  3. Put the tomatoes in a blender along with 2 tablespoons of oatmeal cream and mix until it has become. a smooth sauce.
  4. Then put the tagliatella in a large pan or wok with the sauce and minced chicken and let it stand for 5 minutes on low heat. 

Yum!

Red Curry Chicken Pasta


Duration: 25 minutes

The ingredients for 2 servings
  • 250 g spelt pasta
  • 1 chicken breast filet
  • 1/2 yellow zucchini
  • 10 olives
  • 2 garlic cloves
  • 1 ts red curry powder
  • 1 can tomato puree
  • Handful of fresh chives
  • 2 sprigs fresh basil
  • 2 tbs grated Parmesan cheese
  • Coconut oil

What you do:
  1. Cook pasta as directed on the package. 
  2. Cut the chicken into cubes and fry until golden brown in a little coconut oil. Meanwhile, cut the zucchini into strips and olives in half. Put that with the chicken in the pan and bake until everything is done.
  3. Drain the pasta and add to the pan with the chicken. Press 2 garlic cloves over it, cut the bunch of chives finely and add the can of tomato puree and a teaspoon red curry. Stir well and let it sit for 2 to 3 minutes. Serve the pasta with fresh basil leaves and a little Parmesan cheese sprinkled on top.

Pasta di Gorgonzola (V)

This is definitely my favorite cheat meal!


Duration: 20 minutes

The ingredients for 2 servings:
  • 250 g spaghetti
  • 1 piece of gorgonzola
  • 50 g lean bacon strips
  • 2 handfulls of arugula

What you do:
  1. Cook pasta as directed on the package. Drain the pasta, put the pan back on the heat and add the gorgonzola . Stir until soft and then add the bacon so that there is a creamy cheese sauce. Let this simmer for about 5 minutes. 
  2. Put a handful of arugula on each plate and spoon the spaghetti on top.

Enjoy this delicious cheat meal!

Beef Wraps

My parents came for dinner again so I decided to make wraps with beef because it's easy an you just can't go wrong. It's a cheatmeal for me due to the melted cheese and the beef (which I almost never eat) but enjoyed every bite and to be honest, it's not a really big cheat! So the recipe today is for 4 persons! We ate with the three of us and the remaining two wraps will be kept in the refrigerator so I can save some money!

English recipe:


Duration: 20 minutes

The ingredients for 4 persons:
  • 8 whole wheat wraps 
  • 500 g minced beef 
  • 1 white onion 
  • 1 can of corn 
  • 300 g green beans 
  • 2 tomatoes 
  • 3 tbs sweet paprika powder
  • 1 ts cumin 
  • grated cheese 
  • 1 bowl of salsa sauce mild or hot 
  • 1 bowl of sour cream 
  • 1 bowl of homemade guacamole 
  • sunflower oil 
  • Salt & Pepper


What you do:
  1. Preheat the oven to 200 degrees of Celsius. Cut the ends of the beans, cut them in half and cook for 8 minutes until they are tender. 
  2. Heat a tablespoon of sunflower oil in a pan over high heat. Add the ground beef and loose until done. Meanwhile, cut the onion into small pieces and put it with the beef in the pan when it's halfway done.
  3. When the beef is done, add the paprika powder and cumin seeds with a small splash of water and the corn. Let it stand for a few minutes on low heat. Stir in the beans when they are ready. 
  4. Meanwhile, cut the tomatoes into small cubes. Place the wraps on the work surface and divide the meat mixture over it. Sprinkle some chopped tomatoes on each wrap, fold them and fasten with a toothpick. 
  5. Place the wraps in a greased baking dish, sprinkle with lots of cheese and put in the oven for about 10 minutes until the cheese is melted. 
  6. When the wraps are in the oven, you can put the salsa and sour cream in cute bowls and make the guacamole.

Nederlands recept - Wraps met Rundergehakt:



Tijd: 20 minuten

De ingrediënten voor 4 personen:
  • 8 volkoren wraps
  • 500 g rundergehakt
  • 1 witte ui
  • 1 blikje mais
  • 300 g sperziebonen
  • 2 tomaten
  • 3 el zoete paprika poeder
  • 1 tl komijn
  • geraspte kaas
  • 1 schaaltje salsa saus mild of hot
  • 1 schaaltje zure room
  • 1 schaaltje zelfgemaakte guacamole
  • Zonnebloemolie
  • Peper & Zout
Bereiding:
  1. Verwarm de oven voor op 200 graden Celsius. Snijd de uiteinden van de boontjes, halveer ze en kook in 8 minuten gaar.
  2.  Verwarm een eetlepel zonnebloemolie in een hapjes pan op hoog vuur. Voeg het gehakt toe en rul totdat het gaar is. Snijd ondertussen de ui in stukjes en doe deze er halverwege bij. 
  3. Wanneer het gehakt gerult is doe je de paprika poeder en komijnzaad erbij met een klein scheutje water en de mais. Laat nog een paar minuten op laag vuur staan. Roer de sperziebonen erdoorheen wanneer deze klaar zijn. 
  4. Snijd ondertussen de tomaten in kleine blokjes. Leg de wraps op het werkblad en verdeel het gehakt mengsel erover heen. Strooi over elke wrap wat tomatenblokjes, vouw ze dicht en zet vast met een prikker. 
  5. Leg de wraps in een ingevette ovenschaal, bestrooi met lekker veel kaas en zet zo'n 10 minuten in de oven zodat de kaas lekker gesmolten is.
  6. Wanneer de wraps in de oven staan kun je de salsa en zure room in leuke schaaltjes op tafel zetten en de guacamole maken.

Chicken Quesadilla's

Lately I've been seeing a lot of homemade quesadilla's at Instagram so decided to make them myself. Made it a small cheat meal though because I used regular grated cheese. Why does this make it a cheat? Because you're intestines have trouble processing melted cheese. They see it more like plastic than like food making it difficult to extract any nutrients. But sometimes I just have melted cheese. I love it! And there are way worse foods to be cheating with.

English recipe:


Duration: 

The ingredients for 1 serving quesadilla's:
  • 2 whole wheat wraps
  • 1 chicken breast filet
  • 1 white onion
  • 1 green paprika
  • 1 garlic clove
  • 1 tomato
  • 1 tbs sweet paprika powder
  • 1 ts coriander
  • 75 g grated cheese
  • Salt & Pepper
  • Olive oil
The ingredients for the guacamole
  • 1 ripe avocado
  • 1 tomato
  • 1 lime
  • 1 ts dried or fresh coriander
  • Salt & Pepper

What you do:
  1. Cut the chicken into small, thin strips. Then mix with the paprika powder, coriander and salt and pepper so that everything is covered. Heat 1 tablespoon olive oil and 1 crushed garlic clove in a frying pan over medium to high heat and fry the chicken strips brown and cooked through. Meanwhile, cut the onion and add it to the pan after approximately 2 minutes with the chicken and fry. Cut the paprika and tomatoes into small cubes and fry along with the chicken during the last minute.
  2. Put a frying pan with the size of the wraps on low heat. Spread a thin layer of olive oil on one side of each wrap. Then put 1 wrap with olive oil facing down into the frying pan. Sprinkle with a little more than half of the grated cheese. Then, put the chicken mixture on top followed by the remainder of the cheese. Put another wrap with olive oil upwards on top. Turn the quesadilla when the cheese on the bottom is melted and the wrap on the bottom is golden brown.
  3. How do you turn the quesadilla over without letting it falling apart? Fortunately, that is very simple and all you need are 2 additional large plates. Put a plate on the frying pan, put your hand on top and then turn the pan over so that the whole quesadilla is on the plate. Then put another plate on top and repeat the trick so that the wrap that has not been baked yet sits on top again. Then put the frying pan with the inside down on the plate, hold your hand right under the plate and turn back quickly so the quesadilla is in the pan again. Put back on the heat for a few minutes so that the other wrap is also golden brown.
  4. Meanwhile, make the guacamole. Mash the avocado in a bowl. Cut the tomatoes into small cubes and add along with the coriander and lime juice to the mashed avocado and mix well. Season with salt and pepper.
  5. When the quesadilla is ready, cut it into quarters and serve alongside the guacamole

Nederlands recept - Kip Quesadilla's met Guacamole:



Tijd: 15 minuten

De ingrediënten voor 1 portie quesadilla's:
  • 2 volkoren wraps
  • 1 kipfilet
  • 1 teentje knoflook
  • 1 witte ui
  • 1 groene paprika
  • 1 tomaat
  • 1 el paprika poeder
  • 1 tl gedroogde koriander
  • 75 g geraspte kaas
  • Zout & Peper
  • Olijfolie
De ingrediënten voor de guacamole:
  • 1 rijpe avocado
  • 1 tomaat
  • 1 limoen
  • 1 tl gedroogde of verse koriander
  • Zout & Peper

Bereiding:
  1. Snijd de kip in kleine, smalle reepjes.
